Capt. Anderson’s: The Irresistible Scamp Imperial
Scamp is a small grouper found in the eastern Gulf of Mexico, just off the shore of Panama City. The daily fresh catch is brought from the boats at the marina straight to the preparation table at Capt. Anderson’s and a long time favorite is Capt. Anderson’s mouthwatering Scamp Imperial. The dish draws patrons from near and far. The white-fleshed, sweet-tasting fish is drizzled with olive oil and charcoal-broiled on the famous Greek-style open hearth. It is then topped with fresh, local blue crab meat and chopped spring onions and parsley. The traditional preparation is to drench the dish in savory lemon butter, but the natural flavor of Scamp is so delicious, you may want to request the butter on the side.
