Fresh Ahi Tuna, tossed with a light soy sauce, sesame oil and sesame seeds, is artfully arranged on a bed of rice. Topped with fresh avocado and allspice-infused wonton crisps, this traditional Hawaiian dish offers layers of taste and textures. The Tuna Poke is an appetizer but is also perfect as a light lunch on a hot summer day. Sous Chef Michael Fiorenza learned to create authentic Poke during his externship in Hawaii. The dish was adapted by Executive Chef Shane Miller who, with his Louisiana roots, is passionate about fresh local seafood.
