Owner and chef of Dat Cajun Place, Trudy White, has won awards with her chicken and Andouille sausage gumbo. Her version of the flavorful creole dish goes beyond classic and into the realm of art. Originally from Houma, Louisiana, Trudy has been making gallons of gumbo from scratch every day for years. The smokiness of the Andouille sausage, the sweetness of the slow-stewed chicken, the richness of the roux, and the warmth of traditional Cajun spices all swirl together to make this dish a masterpiece and is getting more and more in demand. Seven years ago, Trudy started by making 3 gallons a day, and is now well over 14 gallons daily – guests just can’t get enough.
